Seemed odd making a casserole when it’s 93 degrees outside (really didn’t want to heat up the kitchen by turning on the oven either), but needed to use up the rest of the smoked turkey from Labor Day.  I’ve made a few different tetrazzinis before including Emeril’s and Rachel Ray’s, but this one from Betty Crocker is probably the easiest since it uses premade sauce, and it tastes very good!  http://www.bettycrocker.com/recipes/turkey-tetrazzini/2a84917e-ce31-4054-b150-02ac64389ce7
(Don’t be afraid to use extra sauce)
